fa میزان نیترات برخی محصولات پرمصرف عرضه شده در میادین میوه و تره بار منطقه 4 تهران در بهار و زمستان بهداشت عمومی Public Health پژوهشي Research <strong><span style="font-family:B Lotus;">زمینه و هدف: </span></strong><span style="font-family:B Lotus;">سلامت غذا و تغذیه همواره یکی از دغدغه های بزرگ بشر بوده است. وجود نیترات در غذا ممکن است سلامت آن را تحت تاثیر قرار دهد. پژوهش حاضر با هدف بررسی محتوای نیترات محصولات پرمصرف </span><span dir="LTR"><span style="font-family:Times New Roman,serif;">)</span></span><span style="font-family:B Lotus;">سیب زمینی، گوجه فرنگی و پیاز) </span><span style="font-family:B Lotus;">عرضه شده در میدان میوه و تره بار(هروی، ملت و لویزان) منطقه 4 شهر تهران انجام گردید.</span><br> <strong><span style="font-family:B Lotus;">روش کار: </span></strong><span style="font-family:B Lotus;">نمونه برداری در دو فصل زمستان و بهار صورت گرفت. محتوای نیترات با استفاده از دستگاه اسپکتروفتومتر </span><span style="font-family:B Lotus;">اندازه گیری شد.</span><br> <strong><span style="font-family:B Lotus;">نتایج: </span></strong><span style="font-family:B Lotus;">نتایج حاصل نشان داد که بین نیترات 2 فصل زمستان و بهار تفاوت معنی داری وجود داشت. مقدار نیترات اندازه گیری شده پیاز در فصل بهار در میدان میوه و تره بار هروی و همچنین محتوای نیترات سیب زمینی در فصل زمستان در میدان میوه و تره بار لویزان بیشتر از حد استاندارد سلامت بود. مقدار نیترات گوجه فرنگی در هردو فصل کمتر از حد استاندارد بود.</span><br> <strong><span style="font-family:B Lotus;">نتیجه گیری: </span></strong><span style="font-family:B Lotus;">میزان نیترات در نمونه های تحت بررسی در بیشتر موارد کمتر از حد استاندارد بود. این نشان دهنده آن است که سبزیجات میادین مورد بررسی (حداقل در فصل بهار و زمستان) از لحاظ نیترات از کیفیت قابل قبولی برخوردار بوده اند.</span> <strong>Background and Aim: </strong>Healthy food and nutrition have always been a serious concern of human beings. In this regard, food safety is extremely important. As an example, nitrates in foods may affect their safety. The purpose of this study was to investigate the nitrate contents of highly consumed food products (potatoes, tomatoes and onions) on sale in wholesale fruit and vegetable markets (Heravi, Mellat and Lavizan) in District 4 of Tehran, Iran.<br> <strong>Materials and Methods: </strong>Samples of the foods were collected in winter and spring, and their nitrate content was measured spectrophotometrically. The SPSS-20 software was used for data analysis.<br> <strong>Results:</strong> The results showed that there was a statistically significant difference between the vegetables nitrate contents in winter and spring.
